Curried Pumpkin Bisque

Serves 4

Ingredients

1 (15-ounce) can pumpkin puree

1 tsp light brown sugar

1 tbsp curry powder

1 (15-ounce) can unsweetened coconut milk

1 cup vegetable broth (canned or made with a bouillon cube)

Salt and freshly ground black pepper

2 tbsp pumpkin seeds (optional - to garnish before serving)

Directions

Place the pumpkin puree, curry powder and brown sugar in to a pot over a medium heat

Add the coconut milk a little at a time whisking until smooth

Add the vegetable stock until you achieve your desired thickness (you might not need the full cup)

Season with salt and freshly ground black pepper

Simmer for 10 minutes stirring occasionally. Taste and add more seasonings if required. Serve hot and garnish with the pumpkin seeds if using
